Pizza is a family favorite and it's something we enjoy probably once every week or so. I have to admit to usually sticking to the old traditional toppings like pepperoni, Italian sausage, peppers, and such. But my son had chicken on pizza not long ago and has been after me to add this topping to the pizza ever since. I've been on the look-out for a recipe that shows how to do this. Your recipe sounds tasty, delicious and easy. The idea of marinating the chicken in that brine first, sounds like it would add that extra little something to give the chicken its own distinct flavour. I’ll definitely be trying this out soon.
