Tomato Basil Soup

How to Make Tomato Basil Soup in the
Pampered Chef Deluxe Cooking Blender

Soup Ingredients

Fresh tomatoes – we used about 6-8 tomatoes OR use canned whole tomatoes (28 oz can)

1/4 cup vegetable stock or water

1 teaspoon salt and black pepper

1/2 medium onion (chunked)

2 garlic cloves 1/4 cup fresh basil (we used dried)

How to Make Tomato Basil Soup

Step 1: For fresh tomatoes, heat a large pot of water to low boil.

Score the tomato at the top with an “X”.

Place in the hot water for less than a minute.

Once you can see the skin pulling away, transfer to a bowl with cold water and ice. This stops the cooking process and allows you to easily remove the skin and cut off the stem section.

If you are using canned tomatoes, you can skip step 1.

Step 2: Place tomatoes in the cooking blender with 1/4 cup stock, onion, garlic, and salt and pepper.

Secure the lid on the blender.

Turn the dial to “SOUP” setting and press the wheel to start.

Step 3: When the cycle completes, we add min the dried basil and let that mix on “CUSTOM” cycle for 60 seconds.

Step 4: Serve, eat, and ENJOY! especially with a gooey grilled cheese sandwich.

Cook’s notes: If you only have a regular blender or perhaps a food processor, mix up the ingredients and then transfer to a stockpot and simmer on low. Or even put in a slow-cooker on the low setting. It’s all good!
