Chicken Quesadilla from Hello Fresh is on the menu tonight in Beryl’s Cajun Cooking TV kitchen.

Hello Fresh is one of those meal kit delivery services and we decided to try it out. It’s a subscription service that sends you everything you need to cook a dinner for your family. There is a list of menu items to choose from, and you pick a certain number and they are sent to you packed with ice-packs and complete recipe instructions. A pretty slick package all in all that would be very convenient for busy working people.

For my birthday, I wanted to create my favorite – a Coconut Shrimp recipe. Whenever we go to a restaurant and I see coconut shrimp on the menu, I have to try it.

Typically, I find that the shrimp are likely made in a distant factory, frozen, and sold to restaurants that don’t prepare their dishes fresh in-house.

However, Roux 61 here in Baton Rouge has by far the best coconut shrimp recipe I have ever tasted. I love the mix of sweet shredded coconut and the heat of cayenne pepper.

Cajun Cooking TV on Facebook Live

An experiment with Cajun Cooking TV on Facebook Live. Last night when we were videoing an episode for our Cajun Cooking TV television production, we experimented with doing a Facebook Live event.

It was not planned and, as those of you who may have seen it, it is plain to see that I (Mike) am very technologically challenged to say the least.

Beryl and I rarely let lack of know-how stop us, so we just gave it a shot anyway.

We have not tried to do a Cajun Cooking TV on Facebook Live before, because frankly, 1- we didn’t know how, 2- we only had one video device (Mike’s iPhone), and 3- Mike was always busy doing the regular video anyway.

Well, in our continuous effort to improve, we had a skilled videographer doing the video for the television show (yay!), so Mike (and his iPhone) were freed up and on the spur of the moment decided to try to figure out the Facebook Live thing.

Even as inept and chaotic as the attempt was, we did get a very positive response from the fine folks that did happen upon the unscheduled event.

So, all of this being said, we’re going to try to make the Cajun Cooking TV on Facebook Live events a regular thing on Saturday nights when we video the television show.

We are not yet organized enough to list an exact starting time just yet, but they will begin at approximately 6 pm Central Time.

We’ll post a better estimated start time about mid-day on Saturdays until we can do better than that.
